Mother's Peanut Brittle by Annette Shelby, wife of U.S. Senator Richard Shelby 1 ½ cups white sugar ½ cup white karo syrup ½ cup boiling water ½ stick butter or margarine ½ teaspoon soda 2 cups raw peanuts Cook sugar, syrup and water until the mixture spins a thread. Add peanuts. Continue to boil until peanuts begin to swell and pop open. Syrup will turn a medium to dark brown. Remove from heat. Add butter and soda. Stir until butter is blended into mixture. Pour onto two well-greased cookie sheets. As candy begins to cool, stretch from center. Continue to pull candy until thin. Break into pieces. Store in airtight container. Recipe Archives... National Peanut Festival Recipe Contest In conjunction with the National Peanut Festival, the Alabama Peanut Producers Association sponsors the NPF Recipe contest. There are four areas of competition: Cakes, Candies, Cookies and Pies. Last year's event recorded more than 260 entries. Prizes are awarded in each division, to an overall student winner and to an overall grand prize winner. Entrants must submit the food item along with the recipe on the morning of the judging.
